Since I've arrived, Wes and I have enjoyed a number of adventures in the way of foods. Some of them have been a great success (like the yum cha) and others have been a bit of a flub (like Thursday night's really hard and really overcooked enchiladas). Friday night, we had a home cooked (pre-made grocery store) meal of pork belly roast and apple sauce with veggies and garlic bread.
Wes also pointed out that thus far, this blog has very few photos and absolutely no photos of me. So. You get photos. Of me. And dinner, naturally.

The roast itself was store-prepared, pre-stuffed with breading, apricot and walnut. It only took about an hour to cook, but because Wes ran off to the store to get apple sauce and garlic bread (and came home with way more food than I thought he would), it ended up cooking for another ten to fifteen minutes as I let the oven cool down ...

... and took photos of our new stove for posterity. Fabulous ceramic-top. It's good to have a stove again. When Wes got back again from the store, he took over the camera and got photos as I toasted the garlic bread, steamed some veggies and set the table.

The roast came out super tender and quite delicious. The apricot is a really nice touch in the stuffing and apple sauce is always awesome with pork. It doesn't hurt that we had enough left over for lunch over the next few days, either.
In spite of the fact that I made dinner (which was
so difficult; the oven has a slew of options to choose from), Wes
forced me to do the dishes as well.

Today, we're going on another adventure to try to replicate secret family recipes (care of my mother) for the sake of a barbecue with his sister's family and in-laws.
